Serves 6 ($0.68 per serve)
Ingredients:
- 1/2 medium onion, diced
- 100g tomato paste
- 250g red lentils
- 6ea beef stock cubes (or enough powder/bullion etc to make up to 6 Cups stock)
- Water
- 125g Cream Cheese
- Salt & Pepper to taste
Method:
- Gently sauté the onions, in a bit of oil, to bring out their sweetness.
- Add the tomato paste and continue to sauté for a few more minutes until it’s lovely and fragrant.
- Add the lentils, stock cubes and water and bring to a boil, stirring so the lentils don’t stick to the bottom of your pot.
- Simmer, on low, for as long as it takes until the lentils have broken down and gone mushy.
- Turn off the heat, let it cool for a few minutes, then add the cream cheese and stir through. Season with Salt and Pepper to taste. Serve or package for storing.
Storage Notes:
- Suitable for refrigerating up to 4 days.
- Suitable for freezing.
