Tomato & Lentil Soup

Serves 6 ($0.68 per serve)

Ingredients:

  • 1/2 medium onion, diced
  • 100g tomato paste
  • 250g red lentils
  • 6ea beef stock cubes (or enough powder/bullion etc to make up to 6 Cups stock)
  • Water
  • 125g Cream Cheese
  • Salt & Pepper to taste

Method:

  1. Gently sauté the onions, in a bit of oil, to bring out their sweetness.
  2. Add the tomato paste and continue to sauté for a few more minutes until it’s lovely and fragrant.
  3. Add the lentils, stock cubes and water and bring to a boil, stirring so the lentils don’t stick to the bottom of your pot.
  4. Simmer, on low, for as long as it takes until the lentils have broken down and gone mushy.
  5. Turn off the heat, let it cool for a few minutes, then add the cream cheese and stir through. Season with Salt and Pepper to taste. Serve or package for storing.

Storage Notes:

  • Suitable for refrigerating up to 4 days.
  • Suitable for freezing.
